A typical Peruvian culinary class begins with a market visit. The colors alone are worth the trip—heaps of golden potatoes, vibrant chilies, and exotic fruits like lucuma and chirimoya. Your instructor will likely explain how ancient Andean ingredients like quinoa, aji peppers, and corn have shaped Peruvian cooking for centuries. The blend of Incan heritage and international influences—Spanish, African, Chinese, and Japanese—has made Peru a true melting pot of flavor.

Back in the kitchen, you’ll roll up your sleeves and learn to prepare iconic dishes such as ceviche, the refreshing citrus-marinated seafood that’s a national treasure, or lomo saltado, a fiery beef stir-fry with a Peruvian twist. For dessert, a serving of suspiro a la limeña might sweeten your afternoon. And no session is complete without a Pisco Sour, the country’s signature cocktail, shaken to perfection.

Program:

In the morning, you will be driven to San Pedro Market (located a few blocks from the Plaza de Armas), where you will experience the local life and see a whole range of products, such as many varieties of potatoes, meats, juices, fruits, vegetables, and more.

Upon arrival at the market, we will receive our "Budget for the Lunch", considering the same in a local family in Cusco, which is between $ 1.50 and $ 3.00 (higher-income families) per person, with this budget must provide for the preparation of a full menu consisting of an appetizer, main dish and dessert, and drink to accompany it.

Guided by a chef, you will buy all the ingredients and you will try to bargain with the sellers to get special prices, as the housewives from Cusco do.

After you have all the ingredients, you will go to a local house where you will have the culinary session. The chef will give you instructions on how to cook a typical dish.
